Poor mommas pizza



POOR MOMMA'S PIZZA
sliced bread
spaghetti or pizza sauce (I made my own-the recipe is below)
shredded mozzarella cheese


Pre-heat oven to 450. Place bread on baking sheet. Top bread with sauce and spread to edges. Sprinkle with cheese. Bake for 5-10 minutes (it took 6 minutes in my oven). Enjoy :)


PIZZA SAUCE
1 can tomato sauce (8 oz)
1 tsp oregano
1/2 tsp basil
1/2 tsp garlic salt


Mix ingredients. IMPORTANT- let set 30 minutes to an hour. This makes the flavors combine and taste amazing.

Breakfast Pizza


Ingredients:
Your favorite pizza crust
1/4-1/2 cup part skim ricotta cheese (enough to spread a thin layer over the crust)
6 eggs
1/4 cup milk
salt & pepper to taste
1/4-1/2 cup shredded 2 % monterrey jack cheese (add more, if desired)
1/8 -1/4 cup bacon crumbles


Directions:
Spray a large skillet with cooking spray. In a small bowl, add eggs, milk, salt & pepper to taste. Whisk together to break up eggs. Pour egg mixture in skillet and scramble eggs. Once scrambled, allow to cool about 5 minutes.


Preheat oven to 425 degrees.
Spray a round baking sheet with cooking spray and spread your pizza dough out into a circle about 12 inches or so. Spray dough with cooking spray (preferably olive oil spray) and spread a thin layer of ricotta, leaving about an inch of dough on the outer edge.
Top with scrambled eggs, bacon crumbles, & shredded cheese.
Bake for approximately 13 minutes, or until crust is golden brown.

Crunchy Pizza Snacks

CRUNCHY PIZZA SNACKS
flour tortillas (corn is ok if you like them better)
pizza sauce
cheese
mini pepperoni (or other toppings of choice)



Heat oven to 400. Top tortillas with sauce (leaving a 1/4 inch around the edge), cheese and toppings. Bake 5-10 minutes, or until hot and crunchy. They can be baked on a sheet pan or directly on the oven rack.

Pizza Pancakes


Ingredients:
2 cups biscuit/baking mix
2 teaspoons Italian seasoning
2 eggs
1 cup milk
1/2 cup shredded part-skim mozzarella cheese
1/2 cup chopped pepperoni
1/2 cup chopped plum tomatoes
1/4 cup chopped green pepper
1 can (8 ounces) pizza sauce, warmed
Directions: In a large bowl, combine the biscuit mix and Italian seasoning. Combine eggs and milk; stir into dry ingredients just until moistened. Fold in the cheese, pepperoni, tomatoes and green pepper. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until the seconds side is golden brown. Serve with pizza sauce. Yield: 14 pancakes.

No Rise Pizza Crust

Pizza Crust:
1 tbsp active dry yeast
1 cup warm water (105 to 115 degress F)
1 tsp sugar
1 tsp salt
2 tbsp vegetable oil
2 1/2 cups flour
Dissolve the yeast in the water. Add the rest of the ingredients in and mix. Dump onto a floured surface. Knead into a smooth dough (five minutes or so). Roll out and press down onto a greased pizza pan. Add some pizza sauce and your toppings. Bake at 450 degress F for around 12-15 minutes until the crust looks crispy and lightly browned. Dough can also be frozen as well.

Pepperoni Roll ups


You need:

2 tubes of refrigerated French Bread

1 package of sliced pepperoni or turkey pepperoni

6 mozzarella cheese sticks, each cut in 1/2, making 12 sticks


Preheat oven according to package directions for the bread. Lightly grease a large baking sheeet and set aside.Remove bread from tubes but do not unroll. Cut each loaf into six equal pieces. Roll or flatten each piece of dough into a small rectangle. Working from one of the long ends of each rectangle, lay 6 pieces of pepperoni on top of the dough. Slice one cheese stick in 1/2, then lay end to end on top of the pepperoni. Fold dough up and over the cheese and pepperoni, pressing the ends together tightly to seal.Lay the pepperoni rolls, seam side down, onto the baking sheet. Bake for 20-25 minutes.
